Greg Malouf, known as the ‘Godfather of Middle Eastern cuisine,’ was a pioneer in reimagining traditional dishes, elevating them with a modern twist that captivated audiences worldwide. Born in Melbourne to Lebanese parents, Greg embraced the rich culinary heritage of his roots while breaking boundaries to introduce contemporary Middle Eastern cuisine to the world. His work in Australia and beyond earned him the admiration of both chefs and food enthusiasts alike, making him stand out as a true luminary in the industry.

Over the course of his illustrious career, Greg’s influence was felt globally, winning the prestigious James Beard Foundation Award for his cookbook Suqar in 2019 and bringing home two hats at the Chef’s Hat Awards by the Age Good Food Guide. He also led Petersham Nurseries Café in Richmond, London, to acquire a Michelin star, but much more than these accolades, Greg will be remembered for his boundless creativity, his dedication to the art of food, and the warmth with which he touched lives.

As we reflect on Greg’s life, it is impossible not to recall the many memories that highlight his remarkable spirit.

Georgie Woollams, Founder of Katch International:

“Greg was one of the funniest and most stubborn chefs I have ever had the pleasure of working with. One of my favourite memories with him is of the time I had to stand in the kitchen, persuading him to step outside for a picture with some celebrities. “I’m a chef; I don’t do pictures!” he insisted, until Chef Troy had to eventually help me gently push him out of the kitchen. When he finally came outside and saw the girls (two Victoria’s Secret models), he surprised us all by saying, “Actually, I don’t mind doing this picture.” It’s moments like these that make this loss feel even more poignant—losing such a character and dear friend is truly heartbreaking.

After our time at Cle, I organised a dinner with Tom and Greg, and that night became a cornerstone of our friendship. We shared laughter and stories, setting the stage for many wonderful collaborations to come. Throughout our work together, Greg was always a vital part of our projects, bringing his unique energy and creativity to every event.

Over the years, we worked together again and again, including a memorable pop-up at W Doha during Ramadan, where his culinary magic shone brightly.

Greg’s home was like a museum, filled with books and art collected from every corner of his travels. He even began creating his own artwork, gifting one piece for a birthday that still sits proudly in our office.

His take on Middle Eastern cuisine was refreshingly different, often challenging traditional norms and inspiring those around him. It was a common sight to see chefs rushing out of the kitchen whenever Greg walked into a restaurant, eager to cook for him and share in his passion for food.

Greg was a cherished part of the Katch family, and his absence will be deeply felt. He always had a Negroni in one hand and an eclectic group around the table for lunch, making every gathering memorable.

He was a man who hated selfies and social media, yet his spirit and laughter will forever be captured in our hearts. We will miss you dearly, Greg.”

Greg and Georgie

Fadi Tayem, the Creative Director of Katch International:

“Greg was one of the kindest, most down-to-earth people I’ve ever met. I was lucky enough to work with him during his first big adventure in Dubai, back in 2013, at Cle Dubai.

He was such an easygoing chef, full of talent, and working with him was an absolute pleasure. The way his team stood by him and how they loved working alongside him says everything about the kind of person he was.

I’ll always remember his warm smile and the amazing stories behind his dishes. One of my favourite memories is a dinner at his place, where he introduced me to the flavours of the Middle East in a way I’d never experienced before. Even now, every time I taste those dishes, I think of that evening and him.

Today, we’re mourning the loss of a friend and an amazing mentor. Greg, you’ll be missed more than words can say. May you rest in peace.”

Greg’s enduring legacy stretches far beyond his awards and accomplishments as he helped shape the way we understand Middle Eastern cuisine, breaking conventions and introducing new perspectives that will influence chefs for generations to come. He was not only a master of flavours but also a storyteller through food, sharing the deep connections and history behind each dish.

Greg Malouf’s impact remains a powerful force in the culinary world. His passion for food, his generous spirit, and his love for life will never be forgotten. Rest in peace, Chef. Your legacy will live on in the hearts and kitchens of those you inspired.

Never to be forgotten, much love Greg, Katch.
